WINEMAK ING Fermentation commenced in stainless steel fermenting tanks with regular ‘pump overs’ to ensure colour and flavour extraction. The wine was transferred to seasoned American Oak hogsheads to complete fermentation. Extended maturation also occurred in these barrels.
